William Fevre - Vaillons Chablis Premier Cru 75cl

William Fevre - Vaillons Chablis Premier Cru 75cl

Winery: William Fevre

Grape Variety: Chardonnay

Region: Chablis Premier Cru, Burgundy, France

Alcohol Content: 13%

Classification: Appellation Chablis Premier Cru Controlee

Viticultural Details:

  • Barrel Fermented · Stainless steel fermentation
  • Maturation: French Oak
  • Ownership: Henriot family
  • Vineyard Notes: Located on the Cote des Vaillons, this appellation has 8 distinct"lieux dits". With a soil base more limestone than clay, sitting on hard, compact Portlandian limestone, it represents all the different types of Chablis terroir under one appellation.
  • Winemaking: 40-50% fermented in french oak barrels and the rest in stainless steel vats.
  • Ageing: 13 or 14 months of maduration, of which 5 to 6 months on fine lees in french oak barrels, for 50 to 60% of the harvest. The end of maduration occurs in stainless steel vats.
  • Producer Tasting Notes: Pronounced nose of fruit and flowers, with lovely freshness and a few mineral touches. Generous palate, with lovely roundness.

Food Pairing: Oysters, Goat Cheese, Cauliflower Soup, Smoked Trout, Pork Tenderloin, Grouper, and Sushi.

Description: This wine's intriguing nose combines rich candlewax with bright lemon oil. The palate is rounded and smooth, with buffered freshness on the midpalate. It is here that the sense of chalky depth comes in, conveying a stony, austere hinterland for which 2018's generous fruit is mere window dressing. With its depth, the wine expresses the vintage beautifully. Drink by 2040.
